Katie Morag's Porridgies

This afternoon Star and I made "porridgies" (flapjacks). Star used to enjoy the Katie Morag stories by Mairi Hedderwick. So did I ... they are nice gentle picture books about a little girl living on a Scottish island with her mother and grandparents, if I remember rightly.* Three or four years ago we borrowed a Katie Morag collected storybook (title long forgotten!) from the library which included this recipe, and have used it ever since. It is quick, easy and child friendly (though my tolerance for stickiness isn't high enough to let Star loose with the golden syrup!).

Ingredients

100g / 4oz butter
75g / 3oz soft brown sugar
30ml / 2 tablespoons golden syrup (light corn syrup)
200g / 8oz rolled oats (porridge oats)
pinch of salt

Method

Melt butter in a large pan over a low heat.
Add sugar and syrup and salt. Mix well.
Stir in rolled oats. Mix very well.
Spread mixture evenly in tray with palette knife.
Bake for 25-35 minutes, till goldie brown.
Take out of oven. Let cool a little.
Mark in squares or fingers with knife.
Leave in tray till cold.
Put pieces in an airtight tin.

* One caveat: Katie Morag's parents are divorced or separated, though this is more apparent in some books than others.

I don't think it is Katie Morag's parents but Grannie Island who is separated from Grandpa Island. I read Katie Morag last night to three of my boys!

I agree! After reading most of the books myself and recently to a young cousin her parents are definitely together, and I think both her grandpa's are dead, although can't be sure as as far as I remember they're not mentioned ...

My Mum (Sadly no more) used to make these for me and my sister and even to some extent my father.
These are really flapjacks and they are a useful fairly healthy quick breakfast or even a packed lunch addition.
HOWEVER I think MY mum used to use runny honey, will this have been instead of the treacle?
You can also add raisins, sultanas and other mixed fruit.

I am moving to a new home and I thought I might look into my memory which has been shattered by Epilepsy and they say old factory senses will help with memory.

I too have been baking these for 10 years since we first read the book! They are wonderful with a handful of sultanas, sometimes I add a little orange zest and a tsp of cinnamon. To ring the changes they are also popular with a sprinkling of white or milk chocolate chips for special occasions...
A wonderful foolproof recipe.
